Cold Side Dishes and Summer Cocktails

Hey there, SIS! Are you getting summer ready?

None of that “beach ready body” business here. Check last week’s Mom-friendly swimsuits post for my take on that.

I mean, what are we doing to squeeze every last drop of fun from these sunny days ahead?

This week I rounded up NEW summer recipes all best served cold. You’ll need to boil the pasta for the Italian pasta salad with homemade dressing, but other than that, you don’t even need to cook.

We’re still in sweatshirt-in-the-evening weather but the can’t-cook-can’t-eat-hot-food days are just around the corner!

Black bean, mango, pineapple salsa

Ingredients

  • 2 cups fresh mango, chopped

  • 1 cup fresh pineapple, chopped

  • 1 jalapeno, finely chopped

  • 1/4 cup red onion, finely chopped

  • 1/2 cup black beans (low-sodium)

  • 1/2 cup red bell pepper, chopped

  • 2 tablespoons EACH: lime juice AND chopped cilantro

Directions

  1. Combine the ingredients in a medium bowl and stir.

  2. Make sure to rise the black beans before adding them to the salsa. 

  3. Refrigerate until ready to serve.


“Salsa” implies to serve it with chips for scooping, but this is so good served over spinach for a great salad option. Switch out the red pepper for a yellow one and you’ll have a black-and-gold dish for tailgating this fall.
