I love putting these recipe collections together because every time I’m like “WAIT! This doesn’t have to be a treat!” Seriously, why aren’t we eating chocolate fruit kabobs for breakfast? Why doesn’t every evening include protein packed hot cocoa?

Some folks feel left out on Valentine’s Day. Some folks feel left out on indulgences when they adopt a healthy lifestyle. I like to think allmost anything can be made better with the addition of chocolate. Or peanut butter. This week’s freebie has plenty of both!

S'MORES RICE CAKES

INGREDIENTS 

  • 4 rice cakes

  • 8 tbsp marshmallow fluff

  • 8 tbsp chocolate chips (I prefer dark chocolate)

  • 1/4 tsp coconut oil

  • Sea salt flakes

DIRECTIONS

  1. In a microwave safe container, melt chocolate chips with coconut oil and stir together until smooth

  2. Spread 2 tablespoons of marshmallow fluff over each rice cake and then spoon on chocolate mixture and spread to cover. Top with flaked sea salt

  3. Let race cakes harden in the fridge for at least an hour so that the chocolate hardens (you can make these ahead of time and keep them stored in the fridge or freezer)
