Five Quick + Easy Sheet Pan Meals

Hey there, SIS. What’s cookin’?

This time of year I love to have something simmering away all day in my slow cooker. Did you miss my Fall Healthy Crockpot Recipes post? Check that out here.

But honestly, when the days are shorter and the mornings darker, sometimes all I want to do is stay in bed a little longer. When I don’t have time to prep the slow cooker in the morning, a sheet pan meal at night is the way to go.

This is seriously the best one-pan option for a healthy meal in no time. The steps for the recipes are usually the same:

  1. Chop veggies

  2. Toss with seasonings

  3. Add protein

  4. Bake

  5. Eat!

So simple but so versatile.

I’ve included sheet pan recipes in round-ups in the past (See here for 12 Easy Meal Prep Recipes) but this week is totally dedicated to this fast food favorite.

Sheet Pan Philly Cheesesteak

INGREDIENTS

  • 2 tbsp olive oil

  • 1 tablespoon Dijon mustard

  • 1/4 cup Worcestershire sauce

  • 1 teaspoon sea salt

  • 1/4 teaspoon freshly cracked black pepper

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1 tablespoon brown sugar

  • 1.5 pounds sirloin steak, very thinly sliced

  • 1 large yellow onion, thinly sliced

  • 1 green bell peppers, thinly sliced

  • 1 red bell peppers, thinly sliced

  • 8 oz. package sliced mushrooms

  • 1/2 cup shredded mozzarella cheese

INSTRUCTIONS

  1. Preheat the oven to 425°F with a rack in the middle position.

  2. In a large bowl, mix the olive oil, mustard, Worcestershire, salt, pepper, garlic powder, onion powder, and brown sugar until combined. Add in the steak, onions, bell peppers, and mushrooms and turn to coat.

  3. Spread out the steak and veggie mixture on a rimmed sheet pan and roast until the veggies are softened and the steak is cooked through (about 15 minutes).

  4. Remove the sheet pan from the oven and turn the oven to broil. Sprinkle the shredded cheese on top of the steak/veggies and place the sheet pan back in the oven for about 2-3 minutes (until the cheese is melted & crispy). Keep your eyes on it so that the cheese doesn’t burn.
