Recipes For Busy Back-To-School Evenings

I’m not a mama to humans, but I know enough teachers and parents to know that the arrival school the school section at Target gets some polarizing reactions.

Are you team “Heck yes let’s get back to a routine” or “Ugh! I never actually got time to relax this summer!”?

No matter the team, we’re gearing up to get BUSY this fall. A few weeks into the new school year you are probably wondering when you ever going to all be in the house at the same time again. Much less have time to enjoy a meal together!

When life gets crazy, frozen kid food in the air fryer starts to look reeeally tempting. But this is exactly the time you need great nutrition to power you through! 

I put together six kid-friendly recipes that are ALMOST as easy as chicken nuggets. They are sure to become go-tos with lots of melty cheese and not a single discernible vegetable.

(But a freezer steamer bag of broccoli won’t hurt anyone!)

Take seven-minute microwave lasagna. It’s really more like two minutes, but, you know. Kids.

Have the lean sausage cooked ahead of time and a kiddo could make this for themselves!


7-Minute Microwave Lasagna

Ingredients

  • 6 ounces cooked sausage (Lean ground turkey sausage works well)

  • ¼ cup pizza or marinara sauce

  • ¼ cup shredded mozzarella cheese

  • ¼ cup cottage or ricotta cheese

  • 1 T Italian seasoning

  • 1 t garlic powder

  • Dash of salt

Directions

  1. Mix the seasonings into the cottage or ricotta cheese. Layer the ingredients: Sausage, sauce, cottage cheese, sausage, sauce, mozzarella cheese.

  2. Microwave two minutes or until heated through with cheese melted.
